I love to cook, but I take special satisfaction in putting together luscious salads. Anytime. For any occasion. Or just to please my hunger. This post is for the Word Press Weekly Photo Challenge – Satisfaction.
This one is an orzo base with lemon zest, lemon juice, olive oil, basil, mint, cranberries and toasted almonds. Below is a simple combination of baby romaine, watermelon, avocado and strawberries.
My salad cravings are so well known that this is what my kids made this year for my birthday dinner. It’s green beans, avocado, olives, tomatoes, baby potatoes, anchovies, romaine, tuna and hard boiled egg.
Mostly, the salads are simple, and based on a few handfuls of whatever I have. But once in a while, I make this more complicated rainbow pasta family favourite, which I’ve posted about before (recipe here.)
